Av0cado Salad is one of my favourite party dishes. I love it with pita chips, tortilla chips or as a side on a heaping plate of food. I only make it when I'm having a party since I can't eat an entire bowl myself.
5 Hass Avocados
1 Can of Summer Crisp Corn
2 teaspooons of chopped garlic
Handful of grape tomatoes (cut and salted)
Handful of chopped coriander
Juice of one lime
1 tsp sugar
1 tsp salt
Mix it all together and enjoy.
Just say avocado and I'm there. LOL.

ReplyDeleteLooks great... I love avocado. When corn is in season, you should try grilling some and adding that to this salad!

mmmm - oh, yes, great brain food!! & coconut is another (oil, milk, fresh . . . ) Medium Chain Fatty Acids, like mother's milk! I think avocados have those as well - we all need 'good fats!'
ReplyDeleteMy current favorite is nettle pesto (have a good source of nettles, so till the basil is big enough, I'm devouring it!)
Avocado salad sounds very nice and refreshing!
ReplyDeleteI love avocados, too, and your salad looks so colorful and delicious. I love the corn in there - a nice, crisp contrast to the smoothness of the avocado. Mmmmmm!
ReplyDeleteI love avocado anything. This looks so delicious.
